The production of our oil begins with the manual harvesting of the olives on the cool mornings of October, ensuring that each fruit is at its optimum point of ripeness. The olives are processed using traditional techniques, using a cold press that preserves all the flavours and nutrients. After harvesting, the olive juice is naturally decanted for a week, a crucial process that allows the formation of an olive oil with a superior character and a light pulp content that provides a unique texture.
